Makes 4 servings
Ingredients:
8 oz. nonfat plain yogurt
1 t. chile powder
1 t. mild or hot curry powder
3/4 t. lime juice
1/2 t. finely chopped garlic
Salt to taste
4 skinless, boneless chicken breasts halves
1 large ripe mango, peeled and finely diced
Directions:
Combine 1/4 cup of the yogurt, chile powder, curry powder, 1/4 teaspoon of the lime juice, garlic and salt in a baking dish. Add chicken, turn to coat, cover and refrigerate for at least 1 hour.
Meanwhile, put remaining yogurt, 2/3 mango and remaining 1/2 teaspoon lime juice into a blender; puree until smooth to make a sauce, then set aside.
Preheat oven to 375.
Bake chicken until just cooked through, about 25 minutes.
Garnish with leftover mango and sauce.
